Spicy Curry Cashews
4 cups raw cashews, soaked for 4+ hours, then drained
1 tablespoon maple syrup
1 Tablespoon olive oil
1/2 teaspoon very crushed chili peppers
1/2 teaspoon sea salt
1/2 teaspoon fresh ground pepper
Mix all ingredients together and bake at 325 F. for 1.5 hours on a large pan lined with parchment paper. Mix cashews up every 10-15 minutes. Keep an eye out so they don’t burn. – some ovens are hotter than others. If they darken too soon, turn the oven to 300 F.
Allow to cool on the pan overnight, or for several hours until completely cool. Store in a glass jar until you are ready to travel!
