Acai Cacao Truffles

Acai Cacao Truffles

Great for traveling, these treats are a super energy food. They can be kept at room temperature for several days, or keep in fridge for up to 2 weeks. Instead of rolling them in acai powder, you can use chocolate powder or cinnamon.

Ingredients
1/4 cup coconut oil
2 Tablespoons cacao powder (+ 1 Tablespoon for extra chocolate taste!)
2 Tablespoons Acai powder + 2 T. for rolling your truffles
1 Tablespoon maple syrup, honey, coconut nectar, or agave syrup
1/4 cup pitted dates
2 Tablespoons almond butter
1 Tablespoon cacao nibs
pinch of salt
Instructions:
  1. Place all ingredients in a food processor or blender and process until a dense dough has formed. A tablespoon a time, form the dough into balls. Roll the balls in acai powder, place the truffles on parchment paper and refrigerate for an hour.
