Beet and Carrot Salad

1 large beet, gold or red. peeled and shredded

3 carrots, washed and shredded

2 green onions, finely sliced

1/2 cup raw pumpkin seeds

1/2 cup raw walnuts

  • soak nuts for 4 + hours for easy digestion

Dressing:

2 oranges, peeled and seeded

2 tablespoons apple cider vinegar

1 tablespoon dijon mustard

1/2 teaspoon salt

Finely shred beets in food processor. Set aside.

Finely Shred carrots in food processor. Set aside. Do not mix with beets until ready to eat – colour will mix and create sludge.

Blend all DRESSING ingredients. Set aside until ready to eat.

Ready to eat? Toss all together and enjoy!
