Spiralled Yam Salad


For Spiralled yams:

2-3 medium yams, sweet potatoes or zucchini

2 Tablespoons olive oil (or coconut oil)

1 teaspoon of each: sea salt, cumin, paprika, basil)

For salad:

2 cups chopped greens

1 cup shredded carrots

1/2 cup shredded beets

1 cup cherry tomatoes (or 2 tomatoes, cut up)1/2 cup chopped red onion

1/2 cup dried cranberries, raisins or currants

Clean yams and spiral or julienne them. Toss with oil and spices. Bake 375 F for 30-35 minutes (on parchment paper).

Combine salad ingredients. Serve topped with yams and add your favourite dressing!
